Mérida, better known as the “White City”, is a beautiful tourist center located in the north of the state of Yucatán, renowned for its fantastic culinary specialties. The cuisine of this region of Mexico is influenced by both indigenous cultures and Spanish traditions, and its delicious flavors depend exclusively on the blend of recipes that are very different from one another. The typical gastronomy of Yucatán incorporates a large number of ingredients used in both Maya and European cooking, such as chocolates, corn, pumpkins, tomatoes, habanero peppers, achiote, wild turkeys, beans, oranges, pork, Edam cheese, and many more. The excellent dishes of the city and the state it belongs to are very different from traditional Mexican foods and are not easily found in other regions of the country.

Among the many culinary specialties for tourists to savor while passing through this beautiful city, the most recommended are the following:

  • Cochinita Pibil: is a delicious stew of pork marinated with sour orange and annatto, wrapped in banana leaves and cooked in the oven for approximately 2 hours. This tasty dish is accompanied by pieces of pepper, lime juice, and red onion.
  • Panucho: is a corn tortilla filled with pieces of grilled chicken, lettuce, beans, tomatoes, avocados, jitomates, red onions, and habanero peppers.
  • Lemon Soup: is a delicious soup made with onions, jitomates, fried tortillas, lime, and chicken breast.
  • Poc Chuc: is undoubtedly one of the best-known specialties of Mérida and the state of Yucatán. It consists of delicious chicken or pork that is cooked, grilled, and accompanied by thyme, oregano, tomato, sour orange, cilantro, and roasted onions.
  • Cheese Enchilado: is a Dutch cheese filled with almonds, ground meat, olives, raisins, bell pepper, capers, tomato sauce, and a traditional white sauce called “Kol”.
  • Mukbil Chicken: is a tasty chicken wrapped in sisal leaves or banana leaves, served with a corn dough known as nixtamalized.
  • Padpazules: are warm corn tortillas that are topped with pumpkin seed cream, red onions, eggs, and tomato sauce.
  • Tzic de Venado: is shredded and cooked deer meat, accompanied by cilantro, radishes, tomatoes, red onions, pepper, and sour orange.
