Basically, the recipe involves a fish opened flat, slowly grilled with mangrove firewood over a grate, which ends up smoking the delicious meat. It is known as grilled fish as a nod to the vigorous movements used to handle the fish and achieve the perfect, tender, and affectionate cooking.
