For its preparation, snapper can be used, but mullet, bonito, and skipjack, species abundant in the waters of the Riviera Nayarit, are also widely used. Basically, the recipe involves a fish opened flat, slowly grilled with mangrove firewood over a grate, which ends up smoking the delicious meat. It is known as grilled fish as a nod to the vigorous movements used to handle the fish and achieve the perfect, tender, and affectionate cooking.

Depending on the cook, the fish is previously seasoned with a variety of flavors ranging from the acidity of lime, the spiciness of chili and garlic, to the savory touch of red tomatoes. The result is simply delicious.
